Summer Tomato Pasta

This is one of the simplest dishes in this book—and can be prepared in about five minutes! It's also very healthy. Printer-friendly version.

6 ounces angel hair pasta
1 teaspoon butter
2 medium tomatoes, chopped
2 cloves garlic, minced
1 teaspoon dried oregano leaves
1/4 cup white wine
salt and pepper to taste
Parmesan cheese

Cook pasta in a large pot of boiling salted water until tender but still firm to bite. Angel hair cooks fast so taste it every minute or so until it is done. Drain and place in a medium bowl. Add 1 teaspoon butter and toss until butter melts and pasta is coated. Keep pasta warm in an oven set on low.

Meanwhile, place chopped tomatoes, garlic, oregano, and white wine in a medium saucepan over medium-high heat. Bring to a boil and reduce heat to low. Simmer about 3 minutes. Remove from heat and add salt and pepper to taste.

Divide pasta between two serving bowls or plates. Pour tomato sauce over and sprinkle with Parmesan cheese. Serves 2.
