Chicken Parmesan
1 egg Preheat oven to 425 degrees F. In a shallow dish, beat egg with a whisk until combined and light yellow in color. In another shallow dish, mix flour, salt, pepper, and garlic powder. Heat oil in a medium skillet over medium-high heat. Dip each chicken breast in egg on both sides, then dip into flour mixture to coat completely. Place chicken in skillet. Cook about 3-4 minutes on each side, or until chicken turns golden. Place chicken breasts into a small glass baking dish (8"x8" or smaller). Sprinkle with Parmesan cheese. Pour marinara sauce over. Layer sliced zucchini and sliced mushrooms on top of sauce. Sprinkle mozzarella cheese on top. Cover dish with aluminum foil and bake for 20 minutes. Uncover dish, move to top rack of oven, and turn on broiler. Broil for 2-3 minutes, watching carefully, until cheese is bubbly and starting to turn golden-brown on top.
