Chicken Parmesan

This month's featured recipe is naturally low in carbohydrates, and delicious as well! Remember to differentiate between "good carbs" (whole grains, stone-ground flour, vegetables and fruits) and "bad carbs" (white flour, white rice, potatoes, sugar, and refined grains) if you are following a low-carb diet. 1 egg
1/4 cup stone-ground whole wheat flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
2 tablespoons oil
2 boneless skinless chicken breasts, rinsed and patted dry
1/4 cup parmesan cheese
1 cup tomato-based pasta sauce (or canned tomato sauce with basil and oregano)
1 cup shredded mozzarella
1 small zucchini, sliced
1/2 cup mushrooms, sliced

Preheat oven to 425 degrees F.

In a shallow dish, beat egg with a whisk until combined and light yellow in color. In another shallow dish, mix flour, salt, pepper, and garlic powder.

Heat oil in a medium skillet over medium-high heat. Dip each chicken breast in egg on both sides, then dip into flour mixture to coat completely. Place chicken in skillet. Cook about 3-4 minutes on each side, or until chicken turns golden.

Place chicken breasts into a small glass baking dish (8"x8" or smaller). Sprinkle with Parmesan cheese. Pour marinara sauce over. Layer sliced zucchini and sliced mushrooms on top of sauce. Sprinkle mozzarella cheese on top.

Cover dish with aluminum foil and bake for 20 minutes. Uncover dish, move to top rack of oven, and turn on broiler. Broil for 2-3 minutes, watching carefully, until cheese is bubbly and starting to turn golden-brown on top.

2 shallow dishes
Medium skillet
Small glass baking dish (8"x8" or smaller)
Aluminum foil

Active Preparation Time: 20 minutes
Start-To-Finish Time: 45 minutes
