BREAKFAST OF CHAMPIONS

Try making a bigger batch of fruit and use it all week. You can substitute any fruit you like, but remember that softer fruit like bananas and berries won't last more than a day or so. Printer-friendly version.

1/2 small apple
1/2 small pear
1 small orange
1/4 cup raisins or dried cranberries (such as Ocean Spray Craisins)
1/2 cup pineapple tidbits or chunks
1/4 teaspoon cinnamon
1 cup low-fat plain yogurt
1 cup low-fat granola

Cut the apple and pear into quarters, and slice out the center core from each piece. Chop the fruit into any size chunks you like. Peel the orange, separate it into sections, and slice each section into 1/2” pieces.

In a medium bowl, combine the apple, pear, orange, raisins or dried cranberries, and drained pineapple. Sprinkle the cinnamon on top, and stir until blended.

Spoon the fruit into two serving bowls. Top each bowl with 1/2 cup yogurt and 1/2 cup granola.

Serves 2, generously.
